Made of 85% Pinot Meunier (of which 15% is vinified as red wine) and 15% Pinot Noir, the grapes for this cuvée are grown in the Auche, on the outskirts of the village of Janvry, to the west of Reims. They are pressed in small stainless steel vats before being transferred to ceramic vats for 12 hours to allow the must to clarify naturally. It is then transferred to large steel vats where it ferments before being bottled for secondary fermentation and ageing on the lees for 2.5 years, followed by a further 6 months’ rest after disgorgement.
The result is a rosé champagne full of fruit and freshness, with some sweet notes of bread and biscuits. The palate is rich in red fruits, with good structure and energetic bubbles.
85% Pinot Meunier, of which 15% is vinified in red, 15% Pinot Noir.
60% wines of the vintage year. 40% reserve wines.
Expedition liqueur addition: between 9 and 10 g/l.
Cellar ageing: 2 and a half years.
Aging in bottle after disgorgement: 6 months.
Contains sulphites.
TASTING NOTES
The visual presentation is dynamic. The fine, lively bubbles rise quickly to the surface to create a beautiful perlage, which contrasts elegantly with the salmon colour of the wine’s layer, which has a slight coppery tinge.
On the nose, fruity notes of strawberry and cherry are accompanied by biscuit aromas, which after a few minutes are reminiscent of “biscuit rosé”. The expression is classic, authentic and seductive.
The attack on the palate is round. It is then harmonious, with a soft palate and good mousse. Some tannins are gradually added to structure the wine and create a denser texture. The sensation to the touch is reminiscent of linen, which lingers on the palate for a long time.
The finish is both structured and elegant. It testifies to the quality of the red wines in the blend.
FOOD PAIRING
The structure of this rosé champagne allows it to be paired with cured meats (salami), Reims ham or pork cheese. It will surprise you when paired with roast red meat. It can also be enjoyed with red fruit desserts.
